Chapter Three is the latest collaborative release between Wild Barrel and Coolum Beer Co.
 
The friendship behind these beers goes back many years. Before Wild Barrel or Coolum Beer Co existed, Jesse and I used to meet regularly to share bottles of wild fermented beer tasting, comparing and talking about the beers that inspired us.
This release continues that tradition.
 
Our latest release in collaboration with Coolum Beer Co, is a blend of two barrels that matured for around 18 months before being blended onto fresh apricots, where it rested for a further four months.
 
The fruit adds a vibrant depth to the beer, creating a bright apricot colour and a lush stone fruit character layered over the complex funk and acidity developed through mixed-culture fermentation.
 
Rich, expressive and beautifully balanced, Chapter Three captures the character of barrel ageing, wild fermentation and the simple joy of brewing beer with friends.
